Coconut, Leek, Tofu Vegetable Soup

So I was staying with some dear friends, Mahan Rishi Singh and Nirbhe Kaur for a few nights maybe 6 years ago, attending an exhibition in New Jersey. I arrived shortly before I was going to be teaching a workshop at their yoga center and I was served some amazing soup by Nirbhe Kaur. I found it difficult not to have 2-3 bowls, as it was scrumptious and very energizing. Next morning I found more of it in the fridge and helped myself once again – with even greater appreciation as a busy and long weekend was just ahead. Nirbhe Kaur mentioned she had made it for teaching training that was happening through the weekend, and I was hoping indulging myself rather generously was not going to deprive any of the trainees of their satisfaction and enjoyment. Nirbhe very kindly shared the recipe with me and I’ve prepared this now several times for our Sunday community meal here at the ashram with appreciative reviews.
So this fantastic, hearty, vegan soup is the main course for Conscious Cooking on January 30th, along with some other fun dishes. Don’t miss them – if at all possible! Blessings!
